The vineyards are situated on predominantly clayish hills at an altitude of about 450 meters above sea level with a southern exposure.

Vineyard cultivation
Organic method. Resistant vine varieties offer the possibility of not carrying out any treatment or in the worst vintages only two or three organic ones without substances of chemical synthesis.

Harvest
Harvesting is done exclusively by hand, as are all the other operations in the vineyard.

Vinification
The carefully selected harvested grapes are left to dry for about three months. Fermentation takes place in steel at a controlled temperature around 17 °C to preserve crispness and bouquets. After a soft pressing, the wine is placed in very small 110-liter French oak barrels for aging, which continues for many months until bottling.

Wine
Gleaming amber yellow of great consistency, already opulent to the eye. Wonderful olfactory profile composed of notes of apricot, date, peach, dried figs, chestnuts, hazelnuts, honey, aromatic herbs, incense and spicy notes. Palate of great balance, crispness and salinity accompany the sip, mitigating sugar and alcohol. Very long and balsamic finish that leaves the palate clean and invites one to continue sipping.

Recommended food pairings
Strictly at the end of a meal, Theia is the perfect accompaniment to blue or very mature cheeses and foie gras. Also excellent on chocolate-based desserts and dry pastries. Also to drink on its own as a meditation wine.
