The vineyards are situated on predominantly clayish hills at an altitude of about 450 meters above sea level with a southern exposure.

Vineyard cultivation
Organic method. Resistant vine varieties offer the possibility of not carrying out any treatment or in the worst vintages only two or three organic ones without substances of chemical synthesis.

Harvest
Harvesting is done exclusively by hand, as are all the other operations in the vineyard.

Vinification
The harvested grapes are de-stemmed with open rollers to maintain the grapes intact. A soft pressing follows then the must is clarified at low temperatures. Fermentation takes place in barrique. After fermentation, it is aged in barrique on its yeast with continuos botonnage until bottling.

Wine
The bouquets are fruity and floral with delicate tropical notes. The passage in barrique gives it delicate toasted and vanilla notes. It is savory on the palate, with excellent acidity and the overall taste has body and consistency. Very long persistence.


Recommended food pairings
A very good match with fish and shellfish dishes or white meats. Ideal for Asian cuisine or spicy dishes. Excellent as an aperitif.
